275g wholemeal flour
275g desiccated coconut
1 tbs cinnamon
1 + 1/2 tsp baking powder
1 + 1/2 tsp bicarb soda
300g soft butter
250g panela
3 eggs
100g maple
1/3 cup choc chips
1/2 cup chopped macadamias
1. Preheat oven to 170°c. Line a baking tray with paper and set aside a large piece of baking paper which you will use to roll and freeze half the mixture in.
2. Combine the flour, cinnamon, bicarb and baking powder in a large bowl.
3. Cream the butter and sugar using a food processor, stand mixer or electric beaters until light and fluffy. Add the eggs one at a time until well combined then continue with the maple until mixed through.
4. With a spoon gently fold in the choc chips and macadamias leaving a few macadamia crumbs to sprinkle on top.
5. Divide the mixture in half and set one portion aside on the large piece of baking paper. Roll the rest into balls, place on baking tray with space between and flatten slightly with your hand and sprinkle with macadamia crumbs.
6. Bake for 12-15mins (depending on size) until brown on the outside and a little soft on top. Take out and leave to cool for 5mins then move to a wire rack to cool completely and firm up. Store in an airtight container for up to 1 week.
7. Roll the remaining dough into a thick log by wrapping the paper around and using your hands. Wrap in cling wrap and store in the fridge for up to 1 week or in the freezer for a month. Bake from frozen by cutting straight off the log and rolling into balls.
